Crustless Quiche Recipe(recipe by TheSalmons)This recipe should work with a crust as well, I just prefer quiche without a crust and it makes it a bit easier to prepare.
Cook the bacon and drain on paper towell then cut it into small pieces. Optionally add a bit of chopped onion or mushroom and cook in the bacon fat. Defrost frozen spinach and squeeze dry. If using fresh spinach, cook till just wilted and chop into small pieces. Shred or chop the cheese into small pieces. A food processor works well for this. We use a mixture of swiss and cheddar cheeses, but have also made the recipe with just Gruyere. Combine cheese, bacon pieces and spinach any optional items in a large bowl. Mix eggs and cream briefly and then add to the other ingredients in the large bowl. Add salt and pepper to taste. Preheat oven to 350o and butter a 10 inch tart pan. Pour quiche mixture into the tart pan and bake for 1 hour and 15 minutes. Tent with aluminum foil for first hour to prevent over browning. More RecipesLynn Salmon <>{ |
